In the vineyard, heavy pruning of the 26 hectares produces a low yield of high quality fruit. Grapes are picked in the early hours of the morning and processed soon afterwards to avoid oxidation.
Grape varieties include Pinot Grigio, Barbera, Sangiovese, Chardonnay, Sauvignon Blanc, Semillon, Riesling, Orange Muscat, White Frontignac,Cabernet Sauvignon, Cabernet Franc, Merlot and Shiraz. These produced exceptional quality red and white table wines, fortifieds and from selected grape varieties left on the vine to become botrytis enhanced, luscious dessert wines.
