Visale's Visit to Monichino Wines

Everyone at Monichino’s were very excited when they heard that celebrity gardener Vasile was coming to visit the winery in September. Vasile from Vasile’s Garden, a well known television show had heard of local businesses and gardens in the Goulburn Valley using sustainable gardening practices and came to witness it for himself.
Monichino winery, Resource GV, GV Water, Greater Shepparton, Moira Shire and the Campaspe Shire had the privilege to host Vasile and showcase the use of regional compost in our vineyard. Vasile came to Monichino Winery on 8th September to watch the natural compost being spread on the vineyard. “Vasile was impressed by our composting technique and |
looks forward to coming back” Terry Monichino said.
Vasile supports sustainable gardening and toured the Goulburn Valley regional composting facility and met with various community identities to celebrate their sustainable gardening practices, water efficiency and the use of recycled organics.
So look for us in the Herald Sun with his articles and his magazine in Bunnings. This episode will be aired nation-wide on channel 31, with extra promotional media on 3AW News radio.
He will be in touch with us to see the outcome. It will be interesting to note the quality of the grapes produced and the health of our |
vines. Everyone is excited to see the results!
We finished the day with Francesca’s magnificent Italian meal and to finish the evening we danced the Zorba with Vasile.

| Tartrates in Red Wine |
Cellaring Wine |
In some wines you may see a small deposit of crystals, particularly after the bottle has been stored in a refrigerator.
The crystals can be found on the end of the cork as shown in the picture or sometimes in the bottle itself. These are tartrate crystals, a natural component of the wine-they precipitate out under cool conditions. Please be assured they are not harmful and a small amount of these crystals is acceptable.

You may have noticed that they are more common in red wine than white. This is due to the cold stabilization process winemakers put the white wine through to ensure white wine is perfectly clear. To do this our winemakers chill the wine and hold it at minus 3 degrees Celsius.
Red wines are not cold stabilized to the same extent as white wines. Tartrate crystals and sediments of coloured tannins may appear in red wine as it ages. They can be easily removed by decanting the wine prior to serving.
Anna says that finding crystals on the end of your cork is a sign of a very good wine. |
It is recommended that you store your wines by laying them down in a dark, well-ventilated environment which is free of odours and vibrations. Wines with the new stelvin caps can be stored standing up. The reason you lay the wines down with a cork is to keep the cork moist.
Temperature guideline should be 13-16°C and the humidity about 70%. This ensures your wines will age in perfect conditions. Check your bottles regularly for leakage. Humidity will ensure that your cork will stay in good condition, but make sure you have good ventilation as too much humidity will result in fungal growth on the corks and it will destroy the labels.

2009 MONICHINO PINOT GRIGIO
Pinot Gris is a very aromatic variety. It can make some of the world’s most beautiful wines. The very best are fragrant and spicy with a slippery viscosity. The same variety is known as Pinot Grigio in Italy.
Styles of Pinot Gris include dry and crisp, dry and mellow, semi-sweet or very sweet wine. Monichino Pinot Grigio is more of a Pinot Gris style. The Pinot Grigio in Italy is more subtly flavoured with crisp acidity.
Appearance: The skin colour of Pinot Grigio berries range from greyish blue to brownish pink. The wines are generally light to mid-yellow in colour.
Aroma: Pear, spice, and stone fruit - No wood maturation
Palate: a rich medium bodied wine with flavours of stone fruit and spice. Soft acidity with good viscosity on the palate. A well balanced wine with good length.
